Yes, Shiny Sunkern can be found in Pokemon GO. You can get a Shiny Sunkern during the Spotlight Hour and regular encounters outside of the Spotlight Hour as a shiny version. You can come across a shiny Sunkern in the wild during the Pokemon GO mini-event. However, you can only encounter it once.

If you’re eager to increase your chances of capturing a shiny Sunkern during the Spotlight Hour in Pokemon GO, follow these tips:

• Check the weather in your area and focus your hunting efforts around places with sunny weather conditions. Sunkern’s spawn rate is higher during sunny weather.
• Before the Spotlight Hour begins, ensure you have an ample supply of Poke Balls and Berries. This will ensure you’re well-prepared to catch multiple Pokemon during the event. 
• Purchase Incense for the event. Incense will attract more Pokemon to your location, which improves your chances of finding a shiny Sunkern.
• Take advantage of spare items like Lucky Eggs or Star Pieces. Activating these items during the event will boost your experience points (XP) and Stardust earned.

It’s important to note that shiny rates do not seem to be boosted during Spotlight Hours, as indicated by data collected by the Pokemon community. However, the sheer number of Pokemon spawns during the hour-long event will still increase your chances of randomly encountering a shiny Pokemon. The more Pokemon you click on, the higher your probability of finding a shiny Sunkern.
