They are basic upside-down tree stumps with leave patterns on them to help make them stand out. It might be tough to see these, considering that they can have a similar color scheme to the ceiling they are attached to. It might be even harder to see them at night, but you might have glanced at it and tried shooting an arrow or something to no success.
The solution to completing these Korok tree stump puzzles in Tears of the Kingdom is to use Ascend under them. You need to travel through the stump and get to the top of the cave. When you pop out the other side and press to exit the Ascend ability, the Korok will appear and reward you with the Korok seed. From there, go on with the rest of your journey.
