Just walk along the canyon from the Gerudo Canyon Stable, and you will find the Shrine you need. For convenience, you can follow these coordinates:

How To Complete The Gerudo Canyon Crystal Quest
So, to complete The Gerudo Canyon Crystal quest in Zelda: Tears of the Kingdom, you must follow the green beam and find Crystal. You must then bring it back to Shrine to receive your reward. However, since Crystal is quite far down the river, you need to create a vehicle.
Follow the beam first. When you reach the Crystal, you will find some stone platforms with Big Wheels and a Steering Stick. Use your Ultrahand to combine them. Then attach the Crystal to your new vehicle. The battery lasts about halfway, so you need to have a few Zonai Charges with you.
After you reach the Rakakudaj Shrine, drag the Crystal to it to complete The Gerudo Canyon Crystal quest. It will unlock the Rakakudaj Shrine, and you can go inside. You will find a Treasure Chest from which you can take the Mighty Zonaite Longsword. Then take the Light of Blessing to complete Shrine.
